Incredible heat distribution, tough stainless steel lining,
expensive but oh so beautiful. Look for pans at least 2mm
(preferably 2.5mm) thick. Mauviel 250C is some of the best cookware
in the world, De Buyer is nice too, if you can afford either. My
wife uses a Mauviel sauce pan when making candy.....
