Great for high-heat searing of burgers and steaks, starting food on the stovetop and moving to the oven, and developing a natural non-stick surface for omelettes and eggs. Needs to be seasoned similar to cast iron. Work best on gas, also well on electric. Induction occasionally causes warping of thinner pans. Sturdier, heavier pans have less chance of warping. For gas, choose any pan. For electric and induction, an oven-safe handle is best. For gas stoves, choose from a wider variety of handles. French brands such as De Buyer, Matfer and Mauviel have excellent quality.
